Tilapia is a fish commonly farmed and eaten worldwide. In Ghana, this is also true. Ghanaians not only enjoy fresh tilapia, but we also have a tradition of drying it with salt.
This dried, salted tilapia is known as Kobi or Koobi in our region. Drying meats, especially fish, is an important part of the cuisine in many African cultures.
Drying the meat, of course, preserves it so that it can be eaten despite lack of refrigeration. This tradition has lasted into modern times even where refrigeration and other preservation techniques are available.
